Hello
I'm trying to configure Alexa, and with regards to on / off lights and dimmers no problem, even for roller shutters and temperature reading.
If, on the other hand, I wanted to read a relative humidity percentage, how should I set it since if I put a percentage it does not recognize them.

As for the voice response, she can only answer to door lock and temperature. You would need to convert it to 2byte and ask for humidity temperature
. Alexa is a simple switch not a messenger.
