We have a project where they have installed 80 DALI2 ballasts and 6 DALI2 B.E.G PD4N-BMS sensors.
First and foremost we hate these projects! Why not put up 6 KNX sensors instead!
Anyway, we previously used a KNX/DALI gateway that could control both ballasts and sensors.
If we buy 1x LM5p2-KCD, 2x CAN-DALI-M3, then we can control 30 DALI2 ballast/sensors from each device?
And we need a suitable DALI PSU as well?

We haven't tested BEG sensors but if they adhere to DALI2 standard they should work as any other.
For LM5p2-KCD you need an external DALI power supply like Mean well DLP-04R. For CAN-DALI-M3 you can use standard DC 15V..18V power supply like Mean well HDR-15-15.

Can someone confirm that CAN-DALI-M3 and LM5p2-KCDZ is limited to controlling 30 DALI-2 ballasts/control gear? We are used to our gateways can controll 64 devices per DALI line, so I just want to make sure I have the right information before I proceed with my project.

30 is a recommended limit if internal DALI power supply is used on CAN-DALI-M3. With an external DALI power supply you can use 64 ballasts.

Yes, but you need an external DALI power supply (Mean Well DLP-04R or any other alternative).

and where should this DALI PSU be connected? I'm thinking of getting the LM5p2-DW1

Old DALI implementation is very limited - you can only control each ballast separately using on/off and scale objects. Everything else must be done using scripts.
KCD supports DALI groups (control of multiple ballasts), scenes, CCT/RGB/RGBW ballasts. You can change most of ballast parameters directly from the UI. It also supports DALI2 sensors and push-button inputs.
