I have to read data from a J1939 / KNX converter I have registers that return 8 states with 3 bits, in the 3-bit LM they already have a type of data but with wrong description , is it possible to create data types with customized descriptions?

Not possible, data types are fixed. But you can use Custom Values to convert numeric values to text to display a readable value.
